Throat black grilled with salt

The Sea of Japan side is a treasure trove of seafood!
Nodoguro is a white-fleshed fish also called akamutsu.
Because the back of its throat is black as if coated with black ink,
it is more familiar in Niigata under the name “Nodoguro”
than “Akamutsu” (red mullet).

Sashimi with plenty of fat is truly “white meat toro.
When grilled or simmered, crack open the light red skin and
you will instantly enjoy the superb meat, with the fat spilling out

Grilled sweetfish with salt

The clear Uonogawa River near Echigo-Yuzawa Onsen is famous for ayu (sweetfish) fishing.
The ayu is caught in the Yuzawa and Ishiuchi areas in the upper reaches of the river.
Enjoy grilled ayu fish grown in the clear waters of the Uonogawa River.

The outside is crispy and the inside is softly baked sweetfish.
It is a popular bespoke dish that is ideal as a companion to sake.

※Natural sweetfish is limited to late July to mid-September, and is frozen at other times.
